Steps
- 1Heat the oven to 200 degrees Celsius. Wrap the beets loosely in foil, set them on a baking sheet and roast 40 to 45 minutes, until a knife slides in with no resistance.
- 2Cook the barley while the beets roast. Rinse it, add it to a pot with the water and a good pinch of the salt, bring to a boil, drop to a simmer, cover and cook about 30 minutes until tender but still chewy. Drain any water left in the pot.
- 3Soften the onion by putting the slices in a small bowl with half the lemon juice and a pinch of salt. Leave it while everything else cooks.
- 4Whisk the dressing from the olive oil, Dijon, lemon zest and remaining lemon juice, with the remaining salt and the pepper.
- 5Peel the beets once cool enough to handle, rubbing the skins off with a paper towel over the sink. Your fingers will go pink and it washes off. Cut them into bite-sized cubes.
- 6Toss it together while the barley is still warm, combining barley, beets, drained onion and dressing, then fold through the dill and scatter the goat cheese and walnuts over the top.
